STEP 1
Mix together oil and sugar; add almond extract, lemon extract and lemon zest. Add eggs and beat mixture together until light and creamy.

In a separate bowl, combine flours, salt and baking powder. Gradually add to the liquids, stirring until well mixed.
STEP 3
Using your hands, work in dried fruits and nuts to the dough, making sure all the ingredients are distributed evenly.
STEP 4
Form dough into two logs, approximately 12-by-2 inches, and place on a baking sheet lined with parchment paper. Bake for 35 minutes, or until lightly browned. Remove from oven and allow to cool for 10 minutes.
STEP 5
Reduce heat to 275 degrees.
STEP 6
Cut logs diagonally into 3/4-inch thick slices; return to baking sheet and lay on their sides. Return to the oven and bake for another 8-10 minutes, or until dry.
